Strawberry & Banana Yoghurt Clusters (Printable View)

Creamy Greek yogurt, strawberry swirl, honey, freeze-dried strawberries, and banana chips. Frozen for a refreshing, fruity crunch.

# What You Need:

→ Yogurt Base

01 - 1 cup plain Greek yogurt (preferably full-fat for creaminess)
02 - 1/2 cup strawberry-flavored yogurt
03 - 1 tablespoon honey or maple syrup
04 - 1/2 teaspoon vanilla extract
05 - Small pinch salt

→ Fruit Mix-ins

06 - 3/4 cup freeze-dried strawberries, roughly crushed
07 - 3/4 cup freeze-dried banana chips, coarsely chopped

→ For Topping

08 - 2 tablespoons freeze-dried strawberries, reserved
09 - 2 tablespoons freeze-dried banana chips, reserved

# How To Make It:

01 - Line a baking sheet or tray with parchment paper to prevent clusters from sticking during freezing.
02 - In a medium mixing bowl, combine the plain Greek yogurt, honey or maple syrup, vanilla extract, and salt. Stir until smooth and fully incorporated.
03 - Divide the yogurt mixture equally between two bowls. To one bowl, add the strawberry-flavored yogurt and gently fold to create a marbled swirl effect without fully blending.
04 - Fold half of the freeze-dried strawberries and banana chips into each bowl, reserving 2 tablespoons of each fruit for topping. Stir gently to keep fruit pieces intact.
05 - Using two spoons, drop heaped spoonfuls of the strawberry-swirl yogurt mixture onto one side of the prepared tray, spacing about 1 inch apart. Repeat with the banana chunk yogurt mixture on the opposite side.
06 - Sprinkle the reserved freeze-dried strawberries and banana chips on top of each cluster, pressing gently to ensure they adhere to the surface.
07 - Place the tray in the freezer for at least 2 hours, or until clusters are completely firm and solid throughout.
08 - Transfer frozen clusters to an airtight container or resealable bag with parchment paper between layers to prevent sticking. Store in the freezer for up to 2 weeks.
09 - Remove clusters from freezer and let sit at room temperature for 2-3 minutes before serving to soften slightly for optimal texture.

# Expert Tips:

01 -
  • They satisfy that afternoon sweet craving without any guilt or baking required
  • The texture contrast between creamy frozen yogurt and crisp fruit pieces is absolutely addictive
  • You can make a huge batch in under 20 minutes and keep them stashed in your freezer for weeks
02 -
  • Level your freezer shelf before starting or your clusters will freeze at weird angles making them impossible to stack
  • Work quickly once you start portioning—the mixture starts melting faster than you would expect
  • The honey version freezes slightly firmer than maple syrup so choose based on your preferred texture
03 -
  • Crush your freeze-dried fruit inside a sealed bag to contain the inevitable powder mess
  • Set a timer for 3 minutes when letting them soften—any longer and they start melting too fast
