Ingredients

  • Tortillas: 4 large flour tortillas
  • Cheese: 1 1/2 cups (150 g) shredded mozzarella cheese, 1/2 cup (50 g) shredded cheddar cheese
  • Optional Fillings: 1/4 cup (30 g) chopped green onions, 1/4 cup (30 g) diced red bell pepper, 1/4 cup (30 g) sliced black olives
  • For Serving: Sour cream, Salsa

Instructions

Step 1:
Using a sharp knife or cookie cutter, cut snowflake patterns into 2 of the tortillas. These will be your tops.
Step 2:
Place the remaining 2 whole tortillas on a work surface. Evenly sprinkle mozzarella and cheddar cheeses over each, leaving a small border around the edges. Add any optional fillings if desired.
Step 3:
Cover each with a snowflake-cut tortilla.
Step 4:
Heat a large nonstick skillet over medium heat. Carefully transfer one quesadilla to the skillet. Cook for 2–3 minutes until the bottom is golden and the cheese begins to melt.
Step 5:
Carefully flip and cook the other side for 2–3 minutes until golden and the cheese is fully melted.
Step 6:
Remove from skillet, repeat with the second quesadilla.
Step 7:
Let cool slightly, then cut into wedges. Serve with sour cream and salsa.
