# What You Need:
→ Noodles
01 - 10.5 oz dried wheat noodles or ramen noodles
02 - Food coloring gels in pink, blue, yellow, and green
→ Cloud Sauce
03 - 3/4 cup whole milk or plant-based milk
04 - 4.2 oz cream cheese or vegan alternative
05 - 1 tbsp unsalted butter or vegan butter
06 - 2 tbsp grated parmesan cheese or nutritional yeast
07 - 1 tsp cornstarch
08 - 1/4 tsp salt
09 - 1/4 tsp white pepper
→ Garnish
10 - 2 scallions, finely sliced
11 - 1 tbsp toasted sesame seeds
12 - Edible flowers or microgreens (optional)
# How To Make It:
01 - Bring a large pot of water to a boil. Divide boiling water into separate heatproof bowls based on the number of colors desired.
02 - Mix a small amount of food coloring gel into each bowl, stirring thoroughly to achieve vibrant color.
03 - Separate noodles into equal portions. Cook each portion in its colored boiling water for 2–3 minutes less than package instructions. Rinse noodles under cold water to halt cooking and set aside.
04 - Melt butter in a saucepan over medium heat. Add cream cheese, stirring until completely combined and smooth.
05 - Whisk in milk, parmesan, cornstarch, salt, and white pepper. Cook, stirring constantly, until sauce thickens and becomes creamy, about 5 minutes.
06 - Add colored noodles to the thickened sauce, gently folding to coat without fully mixing colors for a cloud effect or swirling for a marbled result.
07 - Serve immediately, topped with sliced scallions, toasted sesame seeds, and optional edible flowers or microgreens.
