12 - 2 tablespoons unsalted butter, softened
13 - 1 cup shredded mozzarella cheese

03 - Arrange sourdough slices on a work surface. Spread a generous layer of the spinach artichoke mixture onto 4 slices, then top each with mozzarella and cheddar cheeses.
04 - Place the remaining 4 slices of bread atop the prepared slices to form sandwiches. Spread softened butter evenly on the exterior of each sandwich.
05 - Heat a skillet or griddle over medium heat. Cook sandwiches for 3 to 4 minutes on each side, pressing gently, until the bread is golden and cheese is fully melted.
